I happened to stumble across this recipe at the perfect time. I had a partially-used can of coconut milk in the fridge, and a forlorn butternut squash that had been sitting on the counter for over a week waiting for inspiration to strike. It combines some traditional Thai flavors with somen noodles and tofu for protein. I cook the tofu in a frying pan to crisp it up a little, and it contrasts really nicely with the soft wheat noodles.
