I didn’t set out to do a yellow cake recipe comparison, but when my first batch of cupcakes had an odd crumb and tasted like cake mix, I wanted to find a better recipe and see what it was that made the first recipe so poor. Happy Valentines Day! I love baking cakes for friends’ birthdays, especially when the person whose birthday it is has a unique request. In this case, my friend Steve wanted something with cardamom and chocolate, which I was excited about because it’s not a combination I’ve made before. I know it’s hard to have a bad chocolate cupcake, but some are definitely a lot better than others. This recipe not only dirties just one bowl, but it makes perfectly textured cupcakes with big chocolate flavor.
