Tempeh and Vegetable Rice Bowls


There’s a reason (actually there are several reasons) why Joy the Baker wrote a cookbook and I didn’t. I decided to play around with her carrot cake recipe (changed the flour, cut back on the sugar a little bit, added extra fruit and carrots and nuts, etc) and it kind of backfired.

It tasted awesome, but it was kind of a crumbly mess.

A delicious crumbly mess, though. We ate the whole thing. I suggest you make the real version (from her cookbook) as soon as possible.

Other than that, though, I have managed to avoid too many kitchen failures lately. I rescued some super limp celery by soaking it in cold water for an hour. MAGIC!

I also made a pizza we were pretty stoked about.

Super thin wheat crust, pesto, a thin layer of mozzarella, spinach, sun dried tomatoes, and kalamata olives.

And I made these rice bowls, which are so simple I’m not going to write up a formal recipe. Basically, you steam some brown rice, whisk together equal amounts of soy sauce and rice vinegar with a tablespoon of minced fresh ginger and a splash of olive oil, and top with tempeh and vegetables.

I sauteed the tempeh for just a few minutes, lightly steamed some asparagus, shredded two carrots, and thinly sliced some napa cabbage and green onions. After taking the picture, I added a bunch of kimchi.

Oh, AND we finally entered the 21st century. Yep, after having an ancient, huge, heavy beast of a TV for our entire married life, we finally got a flat screen.

For some reason, I feel like nobody is going to pick it up off the sidewalk.

  • I just made the buttermilk skillet cake from Joy’s book, and may I humbly suggest that you get on that ASAP? :) The pizza looks delicious as well, I love olives on pizza. I’ll also be trying that celery trick as soon as I get home. I always have a bunch of celery in the fridge for juicing, but by Friday’s juice the celery is looking very, very sad. Hope your hip is doing better! I’ll be cheering at the lululemon cheer station on Sunday.

  • We got rid of our behemoth television recently too, though we used the free board on CraigsList since our HOA would be none too happy if we just left it outside! Love these tempeh rice bowls, especially since they’re a great home-alone meal for me because Joe doesn’t care for tempeh.

    I knew the TV would go…we live in pack-rat world. However, I did have to chase the free sign down the street so I could recycle it.

    Also, the carrot cake was delicious!…and I ate approximately 3/4 of it.

  • I always do that to recipes and it always backfires. Usually I try to make them more healthy when they’re not meant to be. The pizza looks amazing. My husband and I love making pizza without the pizza sauce. Delicious!

  • Ha, we’ve been married 5 years and still have a giant old TV like that! I keep wishing it would break, so we woould ahve to buy a new one. There are just always other things I’d rather spend my money on!

    The bowls look tasty, too. We’re doing a mexican style one tonight, with corn, black beans, etc over the brown rice.
