		<description>I love parsnips.  They are quite possibly my favorite root vegetable. I first tried them because they showed up in my organic vegetable box.  The first thing I did with them...roast them in ungodly amounts of olive oil, pepper, rosemary and thyme.  Heavenly!  I&#039;ve since then had them mashed, stir-fried, in cream sauces over pasta or in soups. Pretty much anyhow you cook parsnips is delicious. This definitely looks like a recipe to play with!  Thanks for posting this!</description>
